GLOSSARY OF TERMS
A spicy mayonaised based secret sauce that originated in Northern Alabama.
The name gives it away! The native Alabama recipe gives chicken a whole new meaning. We use our bone-in smoked chicken and flash fry it, trapping in all those juices, then smother it in our white Bama BBQ Sauce.
Using only the premium cut, we hand rub our blended spice, then slowly smoke it for several hours.
Blackened Catfish Tacos:
Crispy wonton taco shell filled with blackened catfish, cole slaw and our mango mayonnaise.
Our spin on traditional Kansas City BBQ, we cube our brisket, then finish it off with a wood char and toss it in our KC Sauce.
A stew made famous in Georgia, this recipe is great year round. Smoked pulled pork, tomatoes, corn, lima beans and spices. Could be a meal on its own!
Carolina BBQ Sauce:
Our version of Carolina BBQ Sauce. A mustard-vinegar based sauce that is popular in South Carolina as well as North Carolina. Pairs extremely well with our smoked pulled pork!
Comfort food at its best! A.K.A. puddin’ corn, hoppy glop, corn mash, and country pudding, some even call it soufflé.
Pickles + Batter +Fried Goodness= AMAZING! Salty large pickle chips surrounded by crunchy fried coating, made to be dipped in our spicy sauce.
This SmokeJack Style gumbo in a spicy stew made without rice. Common in Louisiana and South Carolina, consists of our smoked chicken and smoked sausage mixed with fresh vegetables in a dark roux.
Kansas City BBQ Sauce:
Chef Johnny’s twist on classic tomato based KC Sauce with an Asian flare.
Mojo Smoked Wings:
OMG!! This is the way all wings should taste! Chicken drums and flats smoked, flash fried and tossed in our homemade buffalo sauce. Served with a creamy homemade blue cheese dressing. Finger licking good!
A grated cheddar cheese spread that is a southern culinary icon. Try it as an appetizer with celery, crackers and flatbread.
Our signature item that put SmokeJack on the map! Pork shoulder smoked at a low temperature for hours and easily pulled apart to make mouth watering sandwiches, salads, or even try it on its own.

Our KC sauce jacked up! Roasted pasilla peppers blended with our KC Sauce.
